Wanna join me on a Plant-based Diet Journey?

Happy New Month Everyone!!! I know I’ve been MIA for a while but sometimes it’s good to take breaks and focus on your own well-being, and that’s exactly what I’ve focused on lately. As a result, I’m thinking about going on a plant-based diet. I am motivated by being healthy overall. I was once able to do a junk food fast that started as a 30-day challenge and before I knew it, I was able to stretch the challenge for six months and I dropped 25 pounds.

I think I should be okay with this diet. I have refrained from drinking soda, sugary drinks, and red meat for about 5 years. I know it’s easier said than done so I’ll be sure to report my day to day meal choices and how I feel in general throughout the challenge.

Right now my diet consists of the following:

Carbs: Brown Rice, Whole grain bread and bagel, whole grain pasta, sweet and regular potatoes, Whole Grain Cereal (Honey Bunches of Oats), Plantain

Protein: Chicken, Ground Turkey, Beans (Black-eye peas), Eggs

Veggies: Broccoli, Steamed Carrots, Spinach, Spaghetti Squash, Butternut Squash, Cucumbers, Avocados?, Tomatoes

Fruits: Strawberry, Cantaloupe, Banana, Pear, Apple, mangoes, etc

Snack options: Sweet potato chips, yogurt, fruit, (I’ll add more as they come to mind)

Execution Plan: I think the most important aspect of starting and sticking to a diet is to PLAN AHEAD. What I mean by this is to prep your food ahead of time. It’s easier to get off track when you don’t have a healthy meal and snack on hand with you. When hunger strikes, you’ll be more like to just grab an unhealthy or non-plant-based snack or meal that is in reach.

For the whole of October, I will cut out the nonplant-based items from my current menu, e.g chicken, eggs, and we’ll see what happens next. My understanding is that protein is present in plant-based foods also, so I really won’t be missing much.
